Della Hicks, adult EFNEP educator in Pasquotank County, has been programming with the Food Bank of the Albemarle for many years. They recently expanded their facility and installed a brand-new, state of the art teaching kitchen. As a result of Della’s longtime partnership with the Food Bank, she was one of the first people invited to use the new facility. She recently taught the “Making Smart Drink Choices” lesson from EFNEP’s Families Eating Smart and Moving More curriculum in the new kitchen space with the assistance of Vickie Smith, Pasquotank County Master Food Volunteer.

Della prepared the EFNEP recipe, Fruity Fizz, with blueberries, raspberries, blackberries, lime slices and lemon-lime seltzer water. Participants could choose to add either 100% apple or orange juice to make their fizzy drink. She also prepared two versions of oven-baked chicken nuggets using different types of cereal for the coating along with homemade mashed potatoes and gravy and lima beans. Della reported that several participants who weren’t sure about the chicken recipe loved it so much that they went back for seconds. This wasn’t surprising to Della who knows that when healthy food is prepared well and tastes delicious, it will ultimately win people over. With a little creativity and effort, it’s easy to make healthy food that people are excited to eat!
